This meal is so quick and easy you’ll have dinner on the table in no time! I don’t ever get any complaints with this meal so it truly is a crowd pleaser. You can adapt the ingredients to whatever you have on hand, if you want to avoid chopping chicken then you can get the chicken cheese steak meat from the frozen section at Walmart, I have also seen this at Kroger in the fresh isle, however, theirs is buffalo seasoned which may not be ideal. You also can avoid chopping vegetables by using something like coleslaw mix or a frozen vegetable.
So in case you’re interested in the detailed step by step let’s go over it. Start out by chopping any vegetables and meat you’d like to use, if you have low energy I definitely recommend using canned or already chopped meat and frozen or even canned vegetables. This will also reduce your prep and cook time and I would recommend just adding everything to the pot bringing to a simmer then adding the pasta and continuing on with the recipe. I will also add that even if you don’t get already cooked meat then technically the searing isn’t required, it may feel wrong to just throw raw chicken and vegetables off in the pan but I promise it will all cook in the 15 ish minutes you’re simmering everything to get the pasta cooked.
If you’re wanting to replicate the way I did mine to the T then saute the chicken then add the veggies, then add the soy sauce, broth and get any fond off the bottom of your pan. Bring this up to a simmer and add your pasta. Once your pasta is in cover and stir every few minutes so the pasta doesn’t stick together and nothing sticks to the bottom of the pan. I’ve never needed to add more liquid to this recipe, but if for some reason your pasta isn’t cooked and it’s getting dry add some more liquid. If once your pasta is fully cooked you feel the sauce isn’t saucy enough (it’s to watery per day) then add a simple corn starch slurry, admittedly I never measure this I just add a little cornstarch to a bowl or measuring cup and add a little water. Cornstarch does need to get hot enough to thicken but usually even if I turn the heat off everything is plenty hot enough for the cornstarch to thicken everything. The cornstarch definitely aids in the lo mein mouth feel and appearance.

Easy One Pot Chicken Lo Mein 30 Minute

1 lb chicken breast cubed
1 Bell pepper sliced
1 onion
3 cloves garlic
1 LB spaghetti Pasta
1/2 cup soy sauce
5 cups chicken broth
optional:1/2 TBS cornstarch to thicken sauce
Directions
- chop meat and veggies while you preheat your cooking vessel
- start to saute meat first then add veggies
- add a little amount of broth and scrape all the fond off of the pan then add the rest and break the pasta to fit in your cooking vessel
- cook on medium for 10-15 minutes covered, stirring every few minutes
- if you find the sauce is not thick enough add the corn starch slurry
Notes
- In order to save time I did cut the vegetables as the chicken cooked
- You can also add any seasonings or sauces you’d like
